Healthy Bistro
If you are looking to integrate healthy food into your diet, Bistro Elaia is the place to go.
Bistro Elaia is the retail reflection of the nutritional philosophy of the wellness center. At this healthy bistro, Executive Chef Paolo Neville and his team prepare nutritious meals for catering — and when the building opens, for delivery and dine-in, as well.
The chef works hand-in-hand with our team of nutritionists to develop the Bistro’s menu, insuring the dishes available to our customers are healthy, great tasting and affordable.
Catering
Bistro Elaia is also available to cater events in any of the facility’s multiple meeting and event spaces but also for meetings or events across campus. Research
The Bistro also serves as a research restaurant. With cameras located above the tables, researchers can examine those participating in studies and learn how people act and react as they eat.

Curried Carrot-Parsnip Soup
This is a nice elegant soup that would be a wonderful first course for a romantic Valentines Day dinner and it is also very “Heart Healthy,” helping celebrate American Heart Month.
Ingredients:
- 2 tbsp. olive oil
- 6 oz. onion
- 1/3 cup curry powder
- 1.5 lbs. carrots
- 1 lb. parsnips
- 2 cups fresh tomatoes
- 1/4 cup fresh garlic
- 1/4 cup fresh ginger
- 8 cups low-sodium vegetable broth
- 1 cup Greek yogurt fat-free
- 1/2 cup fresh parsley
- 2 tsp. white pepper
Preparation:
In a large saucepan, sauté onions, carrots, garlic and ginger on low heat until tender. Add parsnips, vegetable stock and curry. Bring to boil; cook 20 minutes, or until all vegetables are tender.
Puree soup and Greek yogurt in a blender or food processor in batches until smooth. Return to saucepan, and heat through. Do not allow to boil.
Yields 10 6oz portions
